Holland Marsh Wineries is one of the few Ontario wineries outside the Niagara Region that also produces ice wine. To make ice wine, the Vintner’s Quality Alliance mandates that specific weather conditions must be met. Grapes must be left to freeze on the vine, and temperatures must be no warmer than -8 degrees Celsius for a period of several days. At this point, the water in the grape freezes, but the sugars do not, causing them to concentrate. Grapes are pressed while still in their frozen state, and the concentrated juice is fermented.
If the temperature conditions are not right, such as in an unpredictable winter where there is a cold snap that doesn’t last, the harvest will be lost. Further, VQA designation as a true ice wine is based on additional factors like quality and growing region. But if conditions are right, the result is worth the risk.
Next time you have the opportunity to experience the wonders of ice wine, here are a few tips:
1. Take a bigger mouthful of ice wine, to start. People tend to sip at it, but the bigger the mouthful, the bigger the flavour.
2. Avoid contact with the tip of your tongue, where your sweet receptors are. Instead, let the ice wine sit at the back of your tongue where your palate won’t be overwhelmed by the rich sugars.
3. Incorporate some air into your sip and keep your nasopharynx open – that’s the part that connects your nose to your throat. Scent is an essential component of taste, and a bit of air will allow the vapours of your ice wine to engage your olfactory senses and amplify the wine’s flavours.
4. Hold your big sip of ice wine in your mouth for a few seconds. Some things are simply too good to be rushed.

Jecara Farms offers three simple, insulated, one room cabins, built from reclaimed century old barn beams with solid wood doors and picture frame windows. Solar panels and a wind generator charge the battery bank and power these cabins sufficiently enough to run the few lights, power a radio and run the compost toilet.

The rustic century-old feel continues with no running water or showers and all cooking is done outdoors on barbeques or over the open fire. Fresh water for drinking and washing up after supper is supplied as is propane for the barbeque and firewood. Warm cosy quilts, fluffy pillows and a beautifully glowing woodstove fire help create a one of kind peaceful and secluded retreat.

Enjoy a morning, afternoon or evening of cutting your own flowers! This beautiful farm is located in the rolling hills of King Township, just outside Newmarket, Ontario. They specialize in growing a variety of flowers from asters to zinnias, with classics like peonies, lilacs, snapdragons, dahlias and sunflowers to unique flowers like drumsticks and ranunculus. But there’s one thing these flowers all have in common – they’re breathtakingly beautiful!
All of the flowers are grown naturally, with sunshine, water from the property, compost and a little love.
Note - To ensure an optimal experience, the farm is open on select dates and you must purchase a ticket online. No drop-in visitors. Check Instagram and Facebook for daily updates on when the farm is open and flowers in bloom. You can also subscribe to their bouquet program.

The Schomberg Horticultural Society's 2024 Self Guided Garden Tour is taking place on Sunday June 23rd from 10am-4pm. Tickets are $15 per person and are sold on tour day at the Schomberg Public Library at 77 Main Street, Schomberg or in advance on eventbrite.ca.
This event is organized in partnership with Arts Society King. Attendees will be able to enjoy unique displays, artists and pop-up shops as they tour the gardens.
